Zucchini!


So I planted Zucchini this year in my garden and I am close to having some that are ready to be picked! I have never grown them before and it looks like I will have more than I can use! I will be giving some away but I would like to freeze some so I can pull it out all year to make bread, etc! So I am asking all my readers, that's you, if you have any good recipes for Zucchini Bread or anything else?! I know I can search the Internet for recipes but I thought getting them from people that have a favorite recipe would be better! Have any of you froze Zucchini before and if so how do you freeze it?? I really appreciate any comments or help you can offer me on this subject! I would hate to let any of the Zucchini go to waste! :)

Last night a friend dropped some off along with a few summer squash and my husband fried some up in a pan! It was so yummy. I love summer and fresh veggies from a garden!

  1. We love zucchini too! Just picked up some huge ones at the local fruit stand. So here is a recipe for Zucchini Parmesan that I love in the summer!

    Slice zucchini (rounds), dip in egg and then breadcrumbs, pan fry.
    Slice and sautee peppers and onions
    Layer your favorite red sauce on bottom of pan, next layer zucchini, peppers & onions, sauce and Cheese (shredded), repeat layers as desired....

    YUMMY!!

  2. Nothing like garden fresh vegtables. I don't have a garden yet but I bought some last weekend downtown Charlotte.
